News HRM series plans switch Low diner turnout leads to lunchtime format for the fall by TECORRA BIGGERS
The Conrad N. Hilton College of Hotel and Restaurant Management and Barron's Restaurant is winding down the Spring 2006 International Dinner Series, where student-run dinner's feature different cuisines from around the world in three-course meals. The college introduced the dinner series this semester to teach students how to manage menus, prepare meals and learn about international food choices. But turnout at the events has been low, so the college plans to create a lunch series next semester. "Turnout is not as much as we would like because it runs in the evening and we can't really market to any University people because they're all usually gone," Kathy Patnaud, lecturer for one of the courses, said. "We generally get friends and family of the students and then we get some faculty and staff here in the college," she said. Advertising for the event has been limited to word of mouth and flyers. The HRM students also catered for large groups during awards ceremonies and banquets that helped to spread the word about the series. "We're going to switch to lunchtime in the fall and try to attract more people. We also have a set menu. Its going to be priced pretty good, between about $5 and $8," Patnaud said. The final night of the series is Thursday with meals being served Tuesday, Wednesday and Thursday from 5 p.m. to 7:30 p.m. at the Barron's Restaurant at Entrance 1 on Calhoun Road. During the series, students prepared American, Greek, Chinese and German cuisines, giving HRM students experience in different cooking techniques and styles. The Caribbean menu featured black bean soup or tropical fruit salad, followed by a choice between entrees of sauteed halibut with warm pineapple and mango compote, crab cakes or chicken with ginger and tamarind. All of which are served with asparagus and sweet potatoes. For dessert the students served banana spleet. Calendars and menus are posted on Barron's Web site at www.hrm.uh.edu/barrons.
