Although some students in the hospitality program at the Conrad N. Hilton College of Hotel & Restaurant Management may see the International Dinner series as a required class, others relish the fact that they will be able to put their skills to the test. The dinner series is student- run, which gives them the chance to put the skills they have learned into action by acting as managers, service managers, chefs and waitstaff. Kathleen Patnaude has been in charge of the program since the fall of 1998. "It's great. A lot of students don't have management skills and this class gives them the chance to practice real life skills to be a manager," Patnaude said. The summer edition of the Dinner Series will be held from 5 to 7:30 p.m. on Tuesday and Thursday with each night boasting a culturally different menu. Thursday was Mexico night and diners could pick from the main entrée consisting of beef fajitas, grilled chicken breast or lemon sautéed fish, all with sides, appetizers and dessert to follow. The program involves the menu, and students must be able to convert those recipes for each themed night. Students are graded on accuracy and given points according to how much or how little the patrons left on their plates. "All the teachers have a lot of experience in hospitality all over the nation. They're really educated and care about their students," Rachael Wilson said. The International Dinner Series 2006 will be held at Barron's Restaurant and Bar through July 13.
